We are Beyond The Shoreline, a food innovation company on a mission to create food that’s healthy for you and for the planet. For the past year, we’ve been working to develop a line of delicious and nutritious products made from sustainably harvested seaweed. Seaweed?!? That’s right! Seaweed has more vitamin C than orange juice, more calcium than milk, and more protein than soybeans. Seaweed is also full of more than 100 vitamins, minerals, and omegas. Our first product is Kelp Jerky, a delicious, nutrient-dense, high protein snack made with locally harvested kelp, top quality shiitake and crimini mushroom stems from all over the Northeast US, and superfoods. We believe it is the world’s most perfect snack! Kelp Jerky is vegan, non-GMO, and free of dairy, eggs, soy, peanuts, and gluten. Kelp Jerky comes in 3 flavors: High Thai’d, BBQ, and Sea Salt. We aim to change your perception of sustainable seafood by working with the plants that grow just "beyond the shoreline" of every coast in the world.

About this project

Seaweed farming has the potential to be the most sustainable form of agriculture on the planet. Seaweed is a zero-input food that requires no fresh water, no fertilizer, no feed, and no arid land. In fact, a kelp farm the size of Washington State could feed the entire planet.

We are working to create a more mindful and flavorful future through sustainable ocean harvesting, driving generations to eat well and waste nothing. When it comes to innovation in the seaweed space, the US is lagging behind Canada, most of Europe, and certainly Asian cultures that have been cultivating seaweed for food and health purposes for thousands of years.

So, we want to unlock the potential for seaweed in the US, and create a new market for seaweed beyond nori chips and rubbery, clear kelp noodles that are over-processed — but we need your help!

After a full year of self-funded research and development, we were invited to debut our product, Kelp Jerky, at the June 2017 Fancy Food Show in the “Future of Food Room.” It received rave reviews!

What’s in Kelp Jerky?

Kelp Jerky is a delicious, nutrient dense, high protein snack made with locally harvested sugar kelp from the coasts of Connecticut to Maine, top quality shiitake and crimini mushroom stems from all over the Northeast, and superfoods like nutritional yeast and pea protein, as well as herbs and spices like sea salt, black pepper, and citrus. Kelp Jerky is vegan, non-GMO, and free of dairy, eggs, soy, peanuts, and gluten.

Why kelp? This amazing sea vegetable is a natural source of vitamins A, B1, B2, C, D and E, as well as minerals including zinc, magnesium, iron, potassium, copper and calcium. In fact, it contains the highest natural concentration of calcium of any food - 10 times more than milk. Most notably, kelp is a rich, natural source of iodine that helps to stimulate a healthy metabolism.

Our Kelp Jerky is sweetened with monkfruit sugar, so it has 0 sugar calories and registers 0 on the glycemic index. It’s also naturally high in fiber and low in fat and calories.

Now, we need your help to finalize our product R&D so that you’ll be able to buy Kelp Jerky in grocery stores, in airports, and on Amazon! We’re raising enough money on PieShell to pay our ocean farmers for this season’s kelp harvest, to buy the necessary equipment to take our Kelp Jerky product to the next level in our East Village, New York City-based lab, and to design and purchase high-quality recyclable packaging for Kelp Jerky.

We need your help to buy this season’s kelp at market price from local ocean farmers in the New England area. Supporting kelp farming isn’t just about the food, it’s about transforming an entire workforce by helping fishers become restorative ocean farmers. Kelp — called the “sequoia of the sea” — soaks up five times more carbon than land-based plants. And kelp farms serve as artificial reefs, attracting more than 150 species of aquatic life. So kelp isn’t just healthy for you and me — it’s also healthy for our planet!

Support our East Village Seaweed Lab!

To launch Kelp Jerky, we need your help to purchase more sophisticated equipment — such as molds, dehydrators, and mixers — to take our product to the next level in our East Village NYC seaweed lab! Who is Beyond The Shoreline
Will Horowitz
Co-founder + Executive Chef

My obsession with seaweed started at a young age, picking it off the beach for family clambakes every summer! As a chef, I am most passionate about showing people just how delicious sustainable foods can be. By creating more great products and value from seaweed, we can incentivize more farmers and communities around it. We designed Kelp Jerky to be the perfect first product for our launch, combining my two favorite ingredients — seaweed and mushrooms — in one easy, low-sugar, protein- and nutrient-packed, on-the-go snack.   Outside of Beyond The Shoreline, I am the founder and chef of the award-winning NYC restaurants Ducks Eatery and Harry & Ida’s. I am also the author of the book “Salt.Smoke.Time” that Harper-Collins is releasing in the Fall of 2017. I learned to cook from my grandparents: one, a French-trained chef who cooked seasonally in the colonial fishing village called Orient Point on the north tip of Long Island, and the other ran a traditional Jewish delicatessen in Harlem. I’m a big believer in using the natural world as our greatest inspiration, and am an avid naturalist, forager, and fisherman.

I love snacking! I travel close to 100% of the year working with multiple companies, and seem to be always training for my next charity race. While sitting down for meals isn’t always an option, I aim to only fuel my body with healthy foods — mostly plants.

In 2016, I started working as an advisor to GreenWave, a nonprofit dedicated to helping fishermen become restorative ocean farmers by cultivating seaweed. One of GreenWave’s biggest challenges was how to get people to eat more seaweed to keep the kelp farmers in business.

After trying the raw kelp noodles that GreenWave’s farmers were pulling out of the water, I knew I had to help bring this healthy food to the masses. I started Beyond The Shoreline because I want to share how delicious kelp is with the world, and to create a line of sustainable foods that are healthy for us and the planet. So I have teamed up with our Executive Chef Will Horowitz to do just that!

Our first product — Kelp Jerky — is the perfect snack. It’s low in fat and sugar, high in protein, vegan, and free from gluten and soy. Whenever we have tough days getting our business going, I remind myself that bringing Kelp Jerky to market means that I’ll get to eat it every day!

I grew up in Maine, not far from the ocean. I’ve always deeply appreciated nature, and have been fascinated by our planet. Growing up near the coast, fresh seafood was a staple in my diet. For years, I was oblivious to how much my food selections affected the planet, until I read a book called “Comfortably Unaware” by Richard Oppenlander, in which the author describes issues of global depletion as it relates to food choices. I was shocked by what I read, and knew I had to do something. I vowed to eat a diet of mostly plants from that day on.

Soon after, I learned about the benefits of seaweed and seaweed farming. Not only is seaweed delicious and nutritious for humans to eat, it also is great for the planet! On top of starting my own farm, I jumped at the chance to join the team of amazing people starting Beyond The Shoreline.

At Beyond The Shoreline, I hope to help create snacks that people can feel good about choosing. Food that is heathy, vegan, nutrient-dense, and sustainable. I hope to leave the planet better than I found it, allowing future generations to enjoy the same beaches and oceans I did growing up.

Growing up, a meal was not a meal unless it included meat. Years later, and after listening to many Tim Ferriss and Joe Rogan podcasts, I’ve conducted a series of personal experiments with my diet in an effort to look and feel my best. Though always a work in progress, this has led me to choose a largely plant-based diet. One of the biggest challenges of this effort has been finding plant-based snacks that are easy to throw in my backpack that are high in protein, full of nutrients, and not loaded with sugar.

When I heard about what Courtney and Will were working on with Beyond The Shoreline, I was quite excited. I have long been a lover of jerky, not only because of its taste, but also its portability — which makes it perfect for road trips and camping.

Combined with the numerous health, environmental, and economic benefits of kelp, Kelp Jerky is not only something I want to eat every day, but also something that I truly believe everyone should be eating! I am now thrilled be part of the Beyond The Shoreline team, and am ready to help bring this tasty product to market!
