About this project

Blue Barn Kitchen Bars were created from the passion to provide a snack bar that is loaded with great nutrition from whole foods instead of overly processed ingredients that are simply touted as being “healthy”. We only use the highest quality local ingredients that have the biggest punch of nutrition, without any preservatives.

Digestive issues affect 60-70 million people in the United States. Let’s start by examining the term FODMAP: Fermentable (broken down / fermented by bacteria in the large bowel) + Oligosaccharides (molecules made up of individual sugars joined together in a chain) + Disaccharides (double-sugar molecules) + Monosaccharides (single-sugar molecules) And Polyols (sugar alcohols)

When put on a low-FODMAP diet, those suffering from gastrointestinal issues – gas, bloating and stomach upset – have found their symptoms were drastically reduced. This step is at the very core of our entire project, which is to create a nutritionally-sound and digestively-healthy meal replacement option. Collaborative development with a nutritional scientist will allow us to create a shelf-stable recipe for distribution so we can reach the clients in need by selling Blue Barn Kitchen Bars everywhere from your local corner store to larger chain outlets. Currently, we have been hand-making Blue Barn Kitchen Bars for our clients in a commercial kitchen in New Jersey, and the response has been tremendous!

Branding and Packaging!

Once we have developed the product, we then need to put it into a package. We hope to work with a branding specialist who can design packaging that is as attractive and appealing as the product itself. Blue Barn Kitchen Bars must be able to stand out in a sea of unhealthy bar options, and provide clear and concise information to the consumer.

There is a ton of work that goes into launching a brand. Finding the right professionals to support Blue Barn Kitchen Bars is the first step. We are seeking the funding to hire a specialist to create our new food brand and design impactful, trial-driven packaging. The specialist will help us to create a memorable identity, as well as develop product communications over all channels including social media and marketing. Dominant consumer perceptions, great thought, and amazing creativity are a great start, but defining a clear roadmap for our brand’s future is only possible with a strong team and loyal consumers. This stellar team will set us up for success in developing new items to round out the product line for gastrointestinal issue-friendly foods.

We hope to work with a firm specifically in these areas: product design, market research, product development, brand identity, brand logo, R&D, packaging design, product labeling and nutritional information, marketing, content messaging, and story telling.

Who is Blue Barn Kitchen Bars
Beth Nydick
Co-founder

I have IBS (Irritable Bowel Syndrome). As a baby, my mom had to feed me meat-based formula because the regular formulas made me sick. Back then, there was no common knowledge about being dairy-free. Throughout my life, I have struggled with stomach aches and other unmentionables — if you’re also a sufferer, you understand. I had doctors tell me it was all in my head, it was just stress, and that I would grow out of it.

I remember being a pre-teen and sitting down to eat Tofutti (soy-based, dairy-free) ice cream, which I had specifically brought with me to a birthday party. When I wasn’t looking, the waitress took it away because she thought it had been delivered to me by mistake. I cried and cried that day, and the feeling that something was wrong with me remained until I went to college.

There, I found out what “vegan” meant. I had never heard that word before — it was 1991 after all! During this time, I had a chance meeting with a vegetarian chef who changed my life. She taught me all about the power of foods. I sat in the library for hours poring over nutrition theory and research — yes, this was all done before the Internet.

I began to eat only whole, natural foods, and before long, I was CURED! I was free of worrying whether I was going to be sick after every meal. Fast forward to 2014, and I’m a certified health coach and loving that I can help clients to live their own healthy lifestyles.

I have two active kids, and I didn’t like the snacks they wanted to eat after school. They wanted to drink Gatorade and eat bars that were full of chemicals and additives. I started making Blue Barn Kitchen Bars as a way to feed my sons a healthy snack that was free of preservatives, chemicals, and anything I was allergic to so that I could eat them too. As time went by, I was able to sell my bars in 11 New Jersey stores, and to create relationships with clients who would buy a dozen bars at a time.

As a holistic nutritionist, I know that food has the power to change people’s wellbeing. I have made a commitment to helping people make a transition to a healthy diet be as seamless as possible. Blue Barn Kitchen Bars are made with fresh, organic, and gluten-free ingredients to nourish anyone who needs naturally-delicious food — with love from my family to yours.


About Beth: As the founder of Blue Barn Kitchen, which is designed around a 360-degree approach to health and wellness, Beth Ritter Nydick helps people live life to its healthiest and fullest potential through her creative recipes, simple meal plans, and total lifestyle programs. In a world flooded with fads, tonics, quick-fixes, and diet dilemmas, Beth is a holistic nutrition and whole living expert who serves as a supportive voice of reason. Her healthy recipes and straightforward advice places healthy living within reach for even the busiest of people.

Beth’s wellness-through-nutrition adventure has led her to be featured as an expert on The Dr. Oz Show, The Chew, and OMJ.com. Dr. Nancy Simpkins
Co-founder

I am a Board Certified Internist who has had a practice in Livingston, NJ for over 25 years. I have been involved in all aspects of internal medicine, ensuring a healthy lifestyle for all ages that incorporates prevention into all aspects of health and wellness. I also hold the position of Medical Consultant for the state of New Jersey. In this role, I work with the state under the federal agency of Social Security Administration, and have received multiple Commissioner Citations from SSA for my dedication and policy formation.

Known for my diagnostic ability, I have become a sought-after speaker, guest, and consultant. I am dedicated to raising awareness on a large variety of topics including IBS (Irritable Bowel Syndrome) and gastrointestinal issues.

As a doctor, I treat a lot of people with IBS, but I never really thought about my own issues with certain foods until a few years ago. Like many of my patients, I would eat lunch and then develop severe lower abdominal cramping. After my exhaustive research into IBS, I found the low FODMAP diet from Monash University in Australia. The low FODMAP diet has changed my life, as I no longer have daily abdominal pain! I want to share my journey with others.

Coming together with Beth and her vast knowledge of nutrition has provided us with the space to create something that my patients are looking for — a healthy and safe alternative to snacking called the Blue Barn Kitchen Bar.


About Doctor Nancy: In addition, Dr. Simpkins has a large media presence, including The Dr. Oz Show, The Today Show, Fox News, and frequent appearances on Wall Street Journal Live. Dr. Simpkins attended Bucknell University and graduated cum laude in 1980 with a degree in psychology. Dr. Simpkins graduated from The Chicago Medical School in 1984, and passed the National Board of Medical Examiners certification exam one year later. She completed both her internship and residency in internal medicine at Montefiore Medical Center in the Bronx. In 1989, Dr. Simpkins received her certification from the American Board of Internal Medicine.
